Soup is one of the most popular meal options for lunch and dinner. It is easily transportable and is perfect for leftovers. This split pea soup recipe is full of important nutrients to the body. It is full of protein and fiber, but is low in calories and fat content. This recipe is also a vegan soup, these are the ingredients:

2 cups of green split peas
6-7 cups water or vegetable stock
1 medium-sized yellow onion, diced
2 creamy yellow potatoes, diced
2 or 3 garlic cloves, pressed or minced
2 carrots, diced
2 celery sticks, diced
1 t of dried marjoram
1 t of dried basil
½ t of dried parsley
¼ t of ground mustard
¼ t of black pepper
Salt and pepper to taste

First, rinse the peas and check for impurities. Once the peas are ready add them and all of the other ingredients, besides the salt and pepper to a soup pot. Place the pot on a burner and bring the mixture to a simmer. Continue to cook on medium heat with the pot loosely covered. Once the peas are tender, the soup will be done. It should take an hour or more. Check the soup continually as it cooks, making sure that the water or vegetable stock does not completely evaporate. Once the soup is ready, the peas should be tender and mushy, the broth creamy and thick. Add the salt and pepper according to taste and then serve the soup hot. This soup can also be prepared using a slow cooker, cooked on low for 6-8 hours.
